The Moment We Started to Believe

When we launched The Phat Pasty Company in 2006, we had no grand masterplan.

There wasn't a five-year strategy pinned to the wall or a spreadsheet forecasting world domination.

There was just Laura and me, a converted campervan called Phatty 1, and a determination to build something we'd be proud of and test ideas for the future...

What happened next surprised even us.

There's an old saying in business.

If nobody copies you... you're probably not doing anything worth copying.

By now, the colourful Phat Vans had become part of everyday life.

From eight o'clock each morning until early afternoon they travelled around the city, stopping at hundreds of businesses every week.

Customers knew the timetable.

They knew the drivers.

There comes a moment in every business when you have to make a choice.

Keep doing what you're doing...

Or take a deep breath and back yourself.

For us, that moment arrived sooner than we ever expected.

By now, two Phat Vans were operating at full capacity. The kitchen at home had become more like a production unit than a family kitchen. Every available surface seemed to be covered with ingredients, paperwork or packaging, and our driveway had become home to two brightly coloured Phat Vans.

The Cornish pasty is one of Britain’s most iconic foods, with a rich history rooted in Cornwall’s mining heritage. Today, it remains a symbol of quality, tradition and craftsmanship, especially when made to official PGI (Protected Geographical Indication) standards.
